Shorba Adas (yemeni Lentil Soup)
Shorba Adas is a traditional Yemeni lentil soup that is both nutritious and comforting. This hearty soup is flavored with aromatic spices and is perfect for a cozy evening meal.
Ingredients
- 1 cup red lentils, rinsed
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp turmeric
- 1/4 tsp cayenne pepper
- 6 cups vegetable broth
- Salt and pepper to taste
- 2 tbsp olive oil
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onions and garlic, and sauté until softened.
- Add the ground cumin, coriander, turmeric, and cayenne pepper to the pot. Stir well to coat the onions and garlic with the spices.
- Add the rinsed red lentils to the pot and pour in the vegetable broth. Bring the mixture to a boil, then reduce the heat and let it simmer for 30-35 minutes, or until the lentils are tender.
- Season the soup with salt and pepper to taste.
- Once the soup is ready, ladle it into bowls and garnish with fresh cilantro.
