Shorba Adas (yemeni Lentil Soup)

Ingredients

  • 1 cup red lentils, rinsed
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric
  • 1/4 tsp cayenne pepper
  • 6 cups vegetable broth
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onions and garlic, and sauté until softened.
  2. Add the ground cumin, coriander, turmeric, and cayenne pepper to the pot. Stir well to coat the onions and garlic with the spices.
  3. Add the rinsed red lentils to the pot and pour in the vegetable broth. Bring the mixture to a boil, then reduce the heat and let it simmer for 30-35 minutes, or until the lentils are tender.
  4. Season the soup with salt and pepper to taste.
  5. Once the soup is ready, ladle it into bowls and garnish with fresh cilantro.
