Shorba (algerian Lentil Soup)
Shorba is a traditional Algerian lentil soup that is hearty, flavorful, and perfect for a comforting meal. This recipe is a staple in Algerian cuisine and is often enjoyed with crusty bread or as a starter for a larger meal.
Ingredients
- 1 cup red lentils, rinsed
- 1 onion, finely chopped
- 2 carrots, diced
- 2 tomatoes, chopped
- 4 cups vegetable broth
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until softened.
- Add the diced carrots and cook for a few minutes until they start to soften.
- Stir in the chopped tomatoes, ground cumin, and paprika. Cook for another 2-3 minutes.
- Add the rinsed red lentils to the pot and pour in the vegetable broth. Season with salt and pepper.
- Bring the soup to a boil, then reduce the heat and let it simmer for 30-35 minutes, or until the lentils are tender.
- Once the lentils are cooked, use an immersion blender to partially blend the soup, leaving some texture.
- Adjust the seasoning if needed and serve the shorba hot, garnished with fresh cilantro.
