Shorba (algerian Lentil Soup)

Ingredients

  • 1 cup red lentils, rinsed
  • 1 onion, finely chopped
  • 2 carrots, diced
  • 2 tomatoes, chopped
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until softened.
  2. Add the diced carrots and cook for a few minutes until they start to soften.
  3. Stir in the chopped tomatoes, ground cumin, and paprika. Cook for another 2-3 minutes.
  4. Add the rinsed red lentils to the pot and pour in the vegetable broth. Season with salt and pepper.
  5. Bring the soup to a boil, then reduce the heat and let it simmer for 30-35 minutes, or until the lentils are tender.
  6. Once the lentils are cooked, use an immersion blender to partially blend the soup, leaving some texture.
  7. Adjust the seasoning if needed and serve the shorba hot, garnished with fresh cilantro.
