Shorba (assyrian Lentil Soup)
Shorba is a traditional Assyrian lentil soup that is hearty, flavorful, and perfect for a cozy night in. This comforting soup is packed with protein and warm spices, making it a delicious and nutritious meal.
Ingredients
- 1 cup red lentils, rinsed
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 6 cups vegetable broth
- Salt and pepper to taste
- Chopped fresh cilantro for garnish
Instructions
- In a large pot, heat some oil over medium heat. Add the onion and garlic, and sauté until softened.
- Add the carrot, celery, cumin, coriander, and turmeric. Cook for a few minutes until the vegetables are slightly tender.
- Stir in the red lentils and vegetable broth. Bring the soup to a boil, then reduce the heat and let it simmer for about 20-25 minutes, or until the lentils are fully cooked.
- Season the soup with salt and pepper to taste.
- Serve the shorba hot, garnished with fresh cilantro.
