Shorba Bisla (yemeni Spiced Pumpkin Soup)

Ingredients

  • 2 cups pumpkin, peeled and diced
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon ground turmeric
  • 4 cups vegetable broth
  • 1/2 cup coconut milk
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until softened.
  3. Add the diced pumpkin, ground cumin, ground coriander, and ground turmeric. Stir to combine.
  4. Pour in the vegetable broth and bring the soup to a boil.
  5. Reduce the heat and let the soup simmer for 20-25 minutes, or until the pumpkin is tender.
  6. Stir in the coconut milk and season with salt and pepper to taste.
  7. Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches.
  8. Simmer the soup for an additional 5 minutes, then remove from heat.
  9. Serve the Shorba Bisla hot, garnished with a drizzle of coconut milk and a sprinkle of ground cumin.
