Shorba Bisla (yemeni Spiced Pumpkin Soup)

Ingredients
- 2 cups pumpkin, peeled and diced
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/4 teaspoon ground turmeric
- 4 cups vegetable broth
- 1/2 cup coconut milk
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic, and sauté until softened.
- Add the diced pumpkin, ground cumin, ground coriander, and ground turmeric. Stir to combine.
- Pour in the vegetable broth and bring the soup to a boil.
- Reduce the heat and let the soup simmer for 20-25 minutes, or until the pumpkin is tender.
- Stir in the coconut milk and season with salt and pepper to taste.
- Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches.
- Simmer the soup for an additional 5 minutes, then remove from heat.
- Serve the Shorba Bisla hot, garnished with a drizzle of coconut milk and a sprinkle of ground cumin.
