Shorba (bor Beef Stir-fry)

Ingredients

  • 1 lb beef, thinly sliced
  • 2 onions, sliced
  • 3 tomatoes, chopped
  • 2 bell peppers, sliced
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tbsp vegetable oil
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/2 tsp turmeric
  • Salt and pepper to taste
  • 4 cups beef broth

Instructions

  1. Heat vegetable oil in a large pan over medium heat.
  2. Add the sliced onions and cook until they are soft and translucent.
  3. Add the minced garlic and grated ginger, and cook for another 2 minutes.
  4. Add the thinly sliced beef to the pan and cook until it is browned on all sides.
  5. Add the chopped tomatoes, sliced bell peppers, cumin, coriander, turmeric, salt, and pepper. Stir well to combine.
  6. Pour in the beef broth and bring the mixture to a simmer. Let it cook for 20-25 minutes until the beef is tender and the flavors have melded together.
  7. Adjust the seasoning if needed, and serve the Shorba hot with rice or flatbread.
