Shorba Djaj is a traditional Algerian spiced carrot soup that is bursting with flavor and warmth. This comforting soup is perfect for a cozy night in or as a starter for a special meal.
Ingredients
- 1 pound carrots, peeled and chopped
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 4 cups vegetable broth
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onions and cook until they are soft and translucent.
- Add the minced garlic, ground cumin, ground coriander, and ground turmeric to the pot. Stir and cook for 1-2 minutes until the spices are fragrant.
- Add the chopped carrots to the pot and pour in the vegetable broth. Bring the mixture to a boil, then reduce the heat and let it simmer for 20-25 minutes, or until the carrots are tender.
- Use an immersion blender to puree the soup until smooth. Season with salt and pepper to taste.
- Serve the Shorba Djaj hot, garnished with fresh cilantro.
