Ingredients

  • 1 pound carrots, peeled and chopped
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onions and cook until they are soft and translucent.
  2. Add the minced garlic, ground cumin, ground coriander, and ground turmeric to the pot. Stir and cook for 1-2 minutes until the spices are fragrant.
  3. Add the chopped carrots to the pot and pour in the vegetable broth. Bring the mixture to a boil, then reduce the heat and let it simmer for 20-25 minutes, or until the carrots are tender.
  4. Use an immersion blender to puree the soup until smooth. Season with salt and pepper to taste.
