Shorba Lablabi (algerian Spiced Pumpkin Soup)
Shorba Lablabi is a traditional Algerian spiced pumpkin soup that is perfect for warming up on a chilly day. This hearty and flavorful soup is packed with warming spices and nutritious ingredients, making it a comforting and satisfying dish.
Ingredients
- 1 small pumpkin, peeled and diced
- 1 onion, chopped
- 3 cloves of garlic, minced
- 1 can of chickpeas, drained and rinsed
- 4 cups vegetable broth
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon cayenne pepper
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
- Add the diced pumpkin, chickpeas, ground cumin, ground coriander, ground turmeric, and cayenne pepper to the pot. Stir to combine and cook for 2-3 minutes.
- Pour in the vegetable broth and bring the soup to a boil. Reduce the heat and let it simmer for 20-25 minutes, or until the pumpkin is tender.
- Using an immersion blender, blend the soup until smooth. If you don't have an immersion blender, carefully transfer the soup to a blender in batches and blend until smooth.
- Season the soup with salt and pepper to taste. Serve hot, garnished with fresh cilantro.
