Shorba Lablabi (algerian Spiced Pumpkin Soup)

Ingredients

  • 1 small pumpkin, peeled and diced
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 1 can of chickpeas, drained and rinsed
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
  2. Add the diced pumpkin, chickpeas, ground cumin, ground coriander, ground turmeric, and cayenne pepper to the pot. Stir to combine and cook for 2-3 minutes.
  3. Pour in the vegetable broth and bring the soup to a boil. Reduce the heat and let it simmer for 20-25 minutes, or until the pumpkin is tender.
  4. Using an immersion blender, blend the soup until smooth. If you don't have an immersion blender, carefully transfer the soup to a blender in batches and blend until smooth.
  5. Season the soup with salt and pepper to taste. Serve hot, garnished with fresh cilantro.
