Shorba (lamb And Lentil Stew)

Ingredients

  • 1 lb lamb, cut into cubes
  • 1 cup lentils, rinsed
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tomatoes, diced
  • 2 carrots, diced
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 6 cups chicken or beef broth
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat some oil over medium heat. Add the lamb cubes and brown them on all sides. Remove the lamb from the pot and set aside.
  2. In the same pot, add the chopped onion and garlic. Sauté until the onion is translucent.
  3. Add the turmeric, cumin, and coriander to the pot, stirring to coat the onions and garlic with the spices.
  4. Return the browned lamb to the pot. Add the lentils, diced tomatoes, and carrots. Pour in the chicken or beef broth.
  5. Bring the shorba to a boil, then reduce the heat and let it simmer for about 1 hour, or until the lamb is tender and the lentils are cooked through.
  6. Season with salt and pepper to taste.
  7. Serve the shorba hot, garnished with fresh cilantro.
