Shorba (omani Spiced Chicken Soup)

Ingredients

  • 1 whole chicken, cut into pieces
  • 2 onions, chopped
  • 3 garlic cloves, minced
  • 2 tomatoes, diced
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 8 cups chicken broth
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, sauté the onions and garlic until softened.
  2. Add the chicken pieces and brown them on all sides.
  3. Stir in the tomatoes, turmeric, cumin, coriander, cinnamon, and cloves.
  4. Pour in the chicken broth and bring the soup to a boil.
  5. Reduce the heat, cover, and simmer for 45 minutes, or until the chicken is cooked through.
  6. Season with salt and pepper to taste.
  7. Serve the shorba hot, garnished with fresh cilantro.
