Ingredients

  • 1 cup red lentils
  • 2 large carrots, chopped
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper
  • 6 cups vegetable broth
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onions and garlic, and sauté until softened.
  2. Add the carrots, lentils, cumin, coriander, turmeric, and cayenne pepper. Stir to combine.
  3. Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer for 20-25 minutes, or until the lentils and carrots are tender.
  4. Using an immersion blender, blend the soup until smooth. Season with salt and pepper to taste.
  5. Serve the shorba hot, garnished with a drizzle of olive oil and a sprinkle of cumin or coriander, if desired.
