Shorba (omani Spiced Lentil And Carrot Soup)
Shorba is a traditional Omani spiced lentil and carrot soup that is packed with warm flavors and wholesome ingredients. This comforting soup is perfect for a cozy night in or as a starter for a special meal.
Ingredients
- 1 cup red lentils
- 2 large carrots, chopped
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/4 teaspoon cayenne pepper
- 6 cups vegetable broth
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onions and garlic, and sauté until softened.
- Add the carrots, lentils, cumin, coriander, turmeric, and cayenne pepper. Stir to combine.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer for 20-25 minutes, or until the lentils and carrots are tender.
- Using an immersion blender, blend the soup until smooth. Season with salt and pepper to taste.
- Serve the shorba hot, garnished with a drizzle of olive oil and a sprinkle of cumin or coriander, if desired.
