Shorba (omani Spiced Lentil And Pumpkin Soup)
Shorba is a traditional Omani spiced lentil and pumpkin soup that is bursting with flavor and warmth. This hearty soup is perfect for a cozy night in or as a starter for a special meal.
Ingredients
- 1 cup red lentils, rinsed
- 1 small pumpkin, peeled and cubed
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon cinnamon
- 6 cups vegetable broth
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.
- Add the spices (turmeric, cumin, coriander, and cinnamon) to the pot and cook for 1-2 minutes until fragrant.
- Add the red lentils, pumpkin, and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 30 minutes, or until the lentils and pumpkin are tender.
- Use an immersion blender to blend the soup until smooth. Alternatively, carefully transfer the soup to a blender in batches and blend until smooth.
- Season with salt and pepper to taste. Serve hot and enjoy!
