Shorba (omani Spiced Lentil And Pumpkin Soup)

Ingredients

  • 1 cup red lentils, rinsed
  • 1 small pumpkin, peeled and cubed
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon cinnamon
  • 6 cups vegetable broth
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.
  2. Add the spices (turmeric, cumin, coriander, and cinnamon) to the pot and cook for 1-2 minutes until fragrant.
  3. Add the red lentils, pumpkin, and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 30 minutes, or until the lentils and pumpkin are tender.
  4. Use an immersion blender to blend the soup until smooth. Alternatively, carefully transfer the soup to a blender in batches and blend until smooth.
  5. Season with salt and pepper to taste. Serve hot and enjoy!
