Ingredients

  • 1 cup red lentils, rinsed
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric
  • 1/4 tsp cayenne pepper
  • 6 cups vegetable broth
  • 4 cups fresh spinach, chopped
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and cook until softened.
  2. Add the cumin, coriander, turmeric, and cayenne pepper. Cook for 1-2 minutes until fragrant.
  3. Add the red lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Add the chopped spinach and cook for an additional 5 minutes.
  5. Season with salt and pepper to taste.
  6. Serve hot and enjoy!
