Shorba (omani Spiced Lentil And Spinach Soup)
Shorba is a traditional Omani spiced lentil and spinach soup that is packed with flavor and nutrients. This hearty soup is perfect for a comforting meal, especially during the cooler months.
Ingredients
- 1 cup red lentils, rinsed
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp turmeric
- 1/4 tsp cayenne pepper
- 6 cups vegetable broth
- 4 cups fresh spinach, chopped
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and cook until softened.
- Add the cumin, coriander, turmeric, and cayenne pepper. Cook for 1-2 minutes until fragrant.
- Add the red lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
- Add the chopped spinach and cook for an additional 5 minutes.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
