Shorba (omani Spiced Lentil And Sweet Potato Soup)
Shorba is a traditional Omani spiced lentil and sweet potato soup that is both hearty and flavorful. This comforting soup is perfect for a cozy night in or as a starter for a special meal.
Ingredients
- 1 cup red lentils
- 2 medium sweet potatoes, peeled and diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/4 teaspoon cayenne pepper
- 6 cups vegetable broth
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
- Add the minced garlic, ground cumin, ground coriander, turmeric, and cayenne pepper to the pot. Cook for 1-2 minutes until fragrant.
- Add the red lentils, diced sweet potatoes, and vegetable broth to the pot. Bring to a boil, then reduce the heat and simmer for 20-25 minutes, or until the lentils and sweet potatoes are tender.
- Use an immersion blender to blend the soup until smooth, or transfer to a blender in batches and blend until smooth. Season with salt and pepper to taste.
- Serve the shorba hot, garnished with a drizzle of olive oil and a sprinkle of ground cumin or coriander, if desired.
