Ingredients

  • 1 cup red lentils
  • 2 medium sweet potatoes, peeled and diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper
  • 6 cups vegetable broth
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  2. Add the minced garlic, ground cumin, ground coriander, turmeric, and cayenne pepper to the pot. Cook for 1-2 minutes until fragrant.
  3. Add the red lentils, diced sweet potatoes, and vegetable broth to the pot. Bring to a boil, then reduce the heat and simmer for 20-25 minutes, or until the lentils and sweet potatoes are tender.
  4. Use an immersion blender to blend the soup until smooth, or transfer to a blender in batches and blend until smooth. Season with salt and pepper to taste.
  5. Serve the shorba hot, garnished with a drizzle of olive oil and a sprinkle of ground cumin or coriander, if desired.
