Shorba (omani Spiced Lentil Soup)
Shorba is a traditional Omani spiced lentil soup that is both comforting and flavorful. This hearty soup is perfect for warming up on a chilly day and is packed with aromatic spices.
Ingredients
- 1 cup red lentils
- 4 cups vegetable broth
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp turmeric
- 1/4 tsp cayenne pepper
- Salt to taste
- Black pepper to taste
- 2 tbsp olive oil
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
- Add the minced garlic, ground cumin, ground coriander, turmeric, and cayenne pepper to the pot. Cook for 1-2 minutes until fragrant.
- Rinse the red lentils under cold water, then add them to the pot along with the vegetable broth. Bring to a boil, then reduce the heat and simmer for 20-25 minutes, or until the lentils are tender.
- Season the soup with salt and black pepper to taste.
- Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches until smooth.
- Serve the shorba hot, garnished with fresh cilantro.
