Shorba (omani Spiced Vegetable And Lentil Soup)

Ingredients

  • 1 cup red lentils, rinsed
  • 1 onion, finely chopped
  • 2 carrots, diced
  • 2 potatoes, diced
  • 3 garlic cloves, minced
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon cayenne pepper
  • 6 cups vegetable broth
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat some oil over medium heat. Add the onion, carrots, and potatoes. Cook until the vegetables start to soften, about 5 minutes.
  2. Add the minced garlic, ground turmeric, ground cumin, ground coriander, and cayenne pepper. Cook for another 2 minutes, stirring constantly.
  3. Add the rinsed red lentils and vegetable broth. Bring the mixture to a boil, then reduce the heat and let it simmer for 20-25 minutes, or until the lentils and vegetables are tender.
  4. Season with salt and pepper to taste. Serve the shorba hot, garnished with fresh cilantro.
