Shorba (omani Spiced Vegetable And Lentil Soup)
Shorba is a traditional Omani spiced vegetable and lentil soup that is packed with flavor and warmth. This hearty soup is perfect for a comforting meal on a chilly day.
Ingredients
- 1 cup red lentils, rinsed
- 1 onion, finely chopped
- 2 carrots, diced
- 2 potatoes, diced
- 3 garlic cloves, minced
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon cayenne pepper
- 6 cups vegetable broth
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, heat some oil over medium heat. Add the onion, carrots, and potatoes. Cook until the vegetables start to soften, about 5 minutes.
- Add the minced garlic, ground turmeric, ground cumin, ground coriander, and cayenne pepper. Cook for another 2 minutes, stirring constantly.
- Add the rinsed red lentils and vegetable broth. Bring the mixture to a boil, then reduce the heat and let it simmer for 20-25 minutes, or until the lentils and vegetables are tender.
- Season with salt and pepper to taste. Serve the shorba hot, garnished with fresh cilantro.
