Ingredients
- 2 lbs beef stew meat, cubed
- 3 large potatoes, peeled and diced
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1/4 cup tomato paste
- 1 tsp ground cumin
- 1 tsp paprika
- 1/2 tsp turmeric
- 8 cups beef broth
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, brown the beef stew meat over medium-high heat.
- Add the chopped onion and minced garlic, and cook until softened.
- Stir in the tomato paste, cumin, paprika, and turmeric, and cook for 2-3 minutes.
- Add the diced potatoes and beef broth to the pot. Season with salt and pepper.
