Shorba (spiced Lentil Soup)
Shorba is a traditional spiced lentil soup that is popular in Libyan cuisine. It is a comforting and flavorful dish that is perfect for warming up on a chilly day.
Ingredients
- 1 cup red lentils, rinsed
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 carrot, diced
- 1 potato, diced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/4 teaspoon cayenne pepper
- 6 cups vegetable broth
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, heat some oil over medium heat. Add the onion and garlic, and cook until softened.
- Add the carrot, potato, cumin, coriander, turmeric, and cayenne pepper. Cook for a few minutes until the vegetables are coated with the spices.
- Add the red lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the lentils and vegetables are tender.
- Season with salt and pepper to taste.
- Serve the shorba hot, garnished with fresh cilantro.
