Shorba (spiced Lentil Soup)

Ingredients

  • 1 cup red lentils, rinsed
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 carrot, diced
  • 1 potato, diced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper
  • 6 cups vegetable broth
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat some oil over medium heat. Add the onion and garlic, and cook until softened.
  2. Add the carrot, potato, cumin, coriander, turmeric, and cayenne pepper. Cook for a few minutes until the vegetables are coated with the spices.
  3. Add the red lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the lentils and vegetables are tender.
  4. Season with salt and pepper to taste.
  5. Serve the shorba hot, garnished with fresh cilantro.
