Ingredients

  • 1 cup red lentils
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon cayenne pepper
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • Chopped fresh cilantro for garnish

Instructions

  1. In a large pot, heat some oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  2. Add the minced garlic, ground cumin, ground coriander, ground turmeric, and cayenne pepper. Cook for 1-2 minutes until fragrant.
  3. Add the diced tomatoes with their juices and the red lentils. Stir to combine.
  4. Pour in the vegetable broth and bring the soup to a boil. Reduce the heat and let it simmer for 30-35 minutes, or until the lentils are tender.
  5. Season with salt and pepper to taste.
