Shorba (sudanese Spiced Lentil And Tomato Soup)
Shorba is a traditional Sudanese spiced lentil and tomato soup that is bursting with flavor and warmth. This hearty soup is perfect for a cozy night in or as a starter for a special meal.
Ingredients
- 1 cup red lentils
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon cayenne pepper
- 1 can (14 oz) diced tomatoes
- 4 cups vegetable broth
- Salt and pepper to taste
- Chopped fresh cilantro for garnish
Instructions
- In a large pot, heat some oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
- Add the minced garlic, ground cumin, ground coriander, ground turmeric, and cayenne pepper. Cook for 1-2 minutes until fragrant.
- Add the diced tomatoes with their juices and the red lentils. Stir to combine.
- Pour in the vegetable broth and bring the soup to a boil. Reduce the heat and let it simmer for 30-35 minutes, or until the lentils are tender.
- Season with salt and pepper to taste.
- Serve the shorba hot, garnished with chopped fresh cilantro.
