Shorba (terekeka Tomato Soup)
Shorba, also known as Terekeka Tomato Soup, is a popular dish in South Sudanese cuisine. This flavorful and comforting soup is perfect for warming up on a chilly day.
Ingredients
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon cayenne pepper
- 4 cups vegetable broth
- 1 can (14 oz) diced tomatoes
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the chopped onion and cook until softened, about 5 minutes.
- Stir in the minced garlic, ground cumin, ground coriander, ground turmeric, and cayenne pepper. Cook for 1-2 minutes until fragrant.
- Pour in the vegetable broth and diced tomatoes. Bring to a boil, then reduce heat and simmer for 15-20 minutes.
- Season with salt and pepper to taste.
- Garnish with fresh cilantro before serving.
