Ingredients

  • 1 cup brown lentils
  • 1/2 cup long-grain white rice
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon cayenne pepper
  • 8 cups vegetable broth
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh cilantro for garnish

Instructions

  1. Rinse the lentils and rice under cold water and set aside.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
  3. Add the minced garlic, ground cumin, turmeric, and cayenne pepper. Cook for 1-2 minutes until fragrant.
  4. Add the rinsed lentils and rice to the pot and stir to combine with the onion and spice mixture.
  5. Pour in the vegetable broth and bring the soup to a boil. Reduce the heat, cover, and simmer for 30-35 minutes, or until the lentils and rice are tender.
  6. Season the soup with salt and pepper to taste.
  7. Serve the Shorbat Adas hot, garnished with fresh cilantro.
