Shorbat Adas (assyrian Rice And Lentil Soup)
Shorbat Adas is a traditional Assyrian rice and lentil soup that is hearty, comforting, and full of flavor. This nutritious soup is perfect for a cozy night in or as a starter for a special meal.
Ingredients
- 1 cup brown lentils
- 1/2 cup long-grain white rice
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon cayenne pepper
- 8 cups vegetable broth
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh cilantro for garnish
Instructions
- Rinse the lentils and rice under cold water and set aside.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the minced garlic, ground cumin, turmeric, and cayenne pepper. Cook for 1-2 minutes until fragrant.
- Add the rinsed lentils and rice to the pot and stir to combine with the onion and spice mixture.
- Pour in the vegetable broth and bring the soup to a boil. Reduce the heat, cover, and simmer for 30-35 minutes, or until the lentils and rice are tender.
- Season the soup with salt and pepper to taste.
- Serve the Shorbat Adas hot, garnished with fresh cilantro.
