Shorbat Adas (bahraini Spiced Lentil Soup)

Ingredients

  • 1 cup red lentils, rinsed
  • 4 cups vegetable broth
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric
  • 1/4 tsp cayenne pepper
  • Salt to taste
  • Black pepper to taste
  • 2 tbsp olive oil
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  2. Add the minced garlic, ground cumin, ground coriander, turmeric, and cayenne pepper to the pot. Stir and cook for 1-2 minutes until fragrant.
  3. Add the rinsed red lentils and vegetable broth to the pot. Bring to a boil, then reduce the heat and let the soup simmer for 20-25 minutes, or until the lentils are soft.
  4. Season the soup with salt and black pepper to taste.
  5. Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches until smooth.
  6. Serve the Shorbat Adas hot, garnished with fresh cilantro.
