Ingredients
- 1 cup brown lentils
- 1 bunch Swiss chard, chopped
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 6 cups vegetable broth
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/4 teaspoon cayenne pepper
- Salt and pepper to taste
- 2 tablespoons olive oil
- Lemon wedges for serving
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
- Add the minced garlic, ground cumin, ground coriander, and cayenne pepper to the pot. Cook for 1-2 minutes until fragrant.
- Rinse the lentils and add them to the pot along with the vegetable broth. Bring to a boil, then reduce the heat and let it simmer for 20 minutes.
- Add the chopped Swiss chard to the pot and continue to simmer for an additional 15-20 minutes, or until the lentils are tender and the chard is wilted.
- Season the soup with salt and pepper to taste. Serve hot with a squeeze of fresh lemon juice.
