Ingredients

  • 1 cup brown lentils
  • 1 bunch Swiss chard, chopped
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 6 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Lemon wedges for serving

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  2. Add the minced garlic, ground cumin, ground coriander, and cayenne pepper to the pot. Cook for 1-2 minutes until fragrant.
  3. Rinse the lentils and add them to the pot along with the vegetable broth. Bring to a boil, then reduce the heat and let it simmer for 20 minutes.
  4. Add the chopped Swiss chard to the pot and continue to simmer for an additional 15-20 minutes, or until the lentils are tender and the chard is wilted.
  5. Season the soup with salt and pepper to taste. Serve hot with a squeeze of fresh lemon juice.
