Shorbat Adas (chickpea And Spinach Stew)
Shorbat Adas is a traditional Syrian Jewish stew that combines the earthy flavors of chickpeas and spinach with aromatic spices. This hearty and nutritious dish is perfect for a comforting meal on a cold day.
Ingredients
- 1 cup dried chickpeas, soaked overnight
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon cayenne pepper
- 6 cups vegetable broth
- 1 pound fresh spinach, chopped
- Salt and pepper to taste
Instructions
- Heat some olive oil in a large pot over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
- Add the minced garlic, ground cumin, coriander, turmeric, and cayenne pepper. Cook for another 2 minutes, stirring constantly.
- Drain the soaked chickpeas and add them to the pot. Pour in the vegetable broth and bring to a boil.
- Reduce the heat to low, cover the pot, and simmer for 30 minutes or until the chickpeas are tender.
- Add the chopped spinach to the pot and cook for an additional 5 minutes until wilted.
- Season with salt and pepper to taste.
- Serve the Shorbat Adas hot, garnished with a drizzle of olive oil and a squeeze of lemon juice if desired.
