Shorbat Adas (chickpea And Spinach Stew)

Ingredients

  • 1 cup dried chickpeas, soaked overnight
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon cayenne pepper
  • 6 cups vegetable broth
  • 1 pound fresh spinach, chopped
  • Salt and pepper to taste

Instructions

  1. Heat some olive oil in a large pot over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  2. Add the minced garlic, ground cumin, coriander, turmeric, and cayenne pepper. Cook for another 2 minutes, stirring constantly.
  3. Drain the soaked chickpeas and add them to the pot. Pour in the vegetable broth and bring to a boil.
  4. Reduce the heat to low, cover the pot, and simmer for 30 minutes or until the chickpeas are tender.
  5. Add the chopped spinach to the pot and cook for an additional 5 minutes until wilted.
  6. Season with salt and pepper to taste.
  7. Serve the Shorbat Adas hot, garnished with a drizzle of olive oil and a squeeze of lemon juice if desired.
