Shorbat Adas (creamy Lentil Soup With Crispy Bread)
Shorbat Adas is a popular Kuwaiti creamy lentil soup that is often served with crispy bread. This comforting and flavorful soup is perfect for a cozy meal during the colder months.
Ingredients
- 1 cup red lentils, rinsed
- 4 cups vegetable broth
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon turmeric
- Salt and pepper to taste
- 2 tablespoons olive oil
- 4 slices of bread
- 1 tablespoon chopped fresh parsley for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent.
- Add the minced garlic, ground cumin, and turmeric to the pot. Stir and cook for a minute until fragrant.
- Add the rinsed red lentils and vegetable broth to the pot. Bring to a boil, then reduce the heat and let it simmer for 30-35 minutes, or until the lentils are soft.
- While the soup is simmering, preheat the oven to 350°F (175°C). Place the bread slices on a baking sheet and bake for 10-12 minutes, or until crispy.
- Once the lentils are soft, use an immersion blender to blend the soup until smooth. Season with salt and pepper to taste.
- To serve, ladle the creamy lentil soup into bowls and garnish with chopped fresh parsley. Serve with the crispy bread on the side.
