Ingredients

  • 1 cup red lentils, rinsed
  • 4 cups vegetable broth
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon turmeric
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 4 slices of bread
  • 1 tablespoon chopped fresh parsley for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent.
  2. Add the minced garlic, ground cumin, and turmeric to the pot. Stir and cook for a minute until fragrant.
  3. Add the rinsed red lentils and vegetable broth to the pot. Bring to a boil, then reduce the heat and let it simmer for 30-35 minutes, or until the lentils are soft.
  4. While the soup is simmering, preheat the oven to 350°F (175°C). Place the bread slices on a baking sheet and bake for 10-12 minutes, or until crispy.
  5. Once the lentils are soft, use an immersion blender to blend the soup until smooth. Season with salt and pepper to taste.
  6. To serve, ladle the creamy lentil soup into bowls and garnish with chopped fresh parsley. Serve with the crispy bread on the side.
