Shorbat Adas (iraqi Lentil Soup)

Ingredients

  • 1 cup red lentils, rinsed
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 carrot, diced
  • 1 potato, diced
  • 6 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon ground turmeric
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is soft and translucent.
  2. Add the diced carrot and potato to the pot, and cook for a few minutes until they start to soften.
  3. Stir in the rinsed red lentils, ground cumin, and ground turmeric. Pour in the vegetable broth and bring the soup to a boil.
  4. Reduce the heat to low, cover the pot, and let the soup simmer for about 30 minutes, or until the lentils and vegetables are tender.
  5. Season the soup with salt and pepper to taste. If the soup is too thick, you can add more broth or water to reach your desired consistency.
  6. Serve the Shorbat Adas hot, garnished with a drizzle of olive oil and a sprinkle of chopped parsley.
