Shorbat Adas (iraqi Lentil Soup)
Shorbat Adas is a traditional Iraqi lentil soup that is hearty, flavorful, and perfect for a comforting meal. This soup is easy to make and packed with nutritious ingredients, making it a popular choice in Iraqi cuisine.
Ingredients
- 1 cup red lentils, rinsed
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 carrot, diced
- 1 potato, diced
- 6 cups vegetable broth
- 1 teaspoon ground cumin
- 1 teaspoon ground turmeric
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is soft and translucent.
- Add the diced carrot and potato to the pot, and cook for a few minutes until they start to soften.
- Stir in the rinsed red lentils, ground cumin, and ground turmeric. Pour in the vegetable broth and bring the soup to a boil.
- Reduce the heat to low, cover the pot, and let the soup simmer for about 30 minutes, or until the lentils and vegetables are tender.
- Season the soup with salt and pepper to taste. If the soup is too thick, you can add more broth or water to reach your desired consistency.
- Serve the Shorbat Adas hot, garnished with a drizzle of olive oil and a sprinkle of chopped parsley.
