Ingredients

  • 1 cup red lentils
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 carrot, diced
  • 1 potato, diced
  • 6 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon turmeric
  • Salt and pepper to taste
  • Juice of 1 lemon
  • 2 tablespoons olive oil

Instructions

  1. Rinse the lentils under cold water and set aside.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant.
  3. Add the diced carrot and potato to the pot, and cook for a few minutes until they start to soften.
  4. Stir in the cumin, coriander, and turmeric, and cook for another minute to toast the spices.
  5. Pour in the vegetable broth and add the rinsed lentils. Season with salt and pepper, then bring the soup to a boil.
  6. Reduce the heat to low, cover the pot, and let the soup simmer for about 20-25 minutes, or until the lentils and vegetables are tender.
  7. Stir in the lemon juice, then taste and adjust the seasoning if needed.
  8. Serve the Shorbat Adas hot, garnished with a drizzle of olive oil and a sprinkle of fresh herbs if desired.
