Shorbat Adas (lebanese Lentil Soup)
Shorbat Adas is a traditional Lebanese lentil soup that is both nutritious and comforting. This hearty soup is packed with flavors and perfect for a cozy meal, especially during the colder months.
Ingredients
- 1 cup red lentils
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 carrot, diced
- 1 potato, diced
- 6 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1/2 teaspoon turmeric
- Salt and pepper to taste
- Juice of 1 lemon
- 2 tablespoons olive oil
Instructions
- Rinse the lentils under cold water and set aside.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant.
- Add the diced carrot and potato to the pot, and cook for a few minutes until they start to soften.
- Stir in the cumin, coriander, and turmeric, and cook for another minute to toast the spices.
- Pour in the vegetable broth and add the rinsed lentils. Season with salt and pepper, then bring the soup to a boil.
- Reduce the heat to low, cover the pot, and let the soup simmer for about 20-25 minutes, or until the lentils and vegetables are tender.
- Stir in the lemon juice, then taste and adjust the seasoning if needed.
- Serve the Shorbat Adas hot, garnished with a drizzle of olive oil and a sprinkle of fresh herbs if desired.
