Ingredients

  • 1 cup red lentils, rinsed
  • 4 cups vegetable broth
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and cook until softened.
  2. Stir in the cumin, turmeric, and cayenne pepper, and cook for 1 minute.
  3. Add the red lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the lentils are soft.
  4. Use an immersion blender to blend the soup until smooth, or transfer to a blender in batches and blend until smooth.
