Ingredients
- 1 cup red lentils, rinsed
- 4 cups vegetable broth
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon turmeric
- 1/4 teaspoon cayenne pepper
- Salt to taste
- Black pepper to taste
- 2 tablespoons olive oil
- 2 tablespoons fresh lemon juice
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and cook until softened.
- Stir in the cumin, turmeric, and cayenne pepper, and cook for 1 minute.
- Add the red lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the lentils are soft.
- Use an immersion blender to blend the soup until smooth, or transfer to a blender in batches and blend until smooth.
- Stir in the fresh lemon juice, and season with salt and black pepper to taste.
- Serve hot, garnished with a drizzle of olive oil and a sprinkle of cumin, if desired.
