Shorbat Adas (saudi Arabian Lentil Soup)
Shorbat Adas is a traditional Saudi Arabian lentil soup that is both nutritious and comforting. This hearty soup is flavored with warm Middle Eastern spices and is perfect for a cozy meal on a chilly day.
Ingredients
- 1 cup red lentils, rinsed
- 4 cups vegetable broth
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/4 teaspoon cayenne pepper
- Salt to taste
- Black pepper to taste
- 2 tablespoons olive oil
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and sauté until it becomes translucent.
- Add the minced garlic, ground cumin, ground coriander, turmeric, and cayenne pepper. Cook for 1-2 minutes until fragrant.
- Add the rinsed red lentils and vegetable broth to the pot. Bring to a boil, then reduce the heat and let it simmer for 30-35 minutes, or until the lentils are soft.
- Season with salt and black pepper to taste.
- Use an immersion blender to blend the soup until smooth, or transfer half of the soup to a blender and blend until smooth, then return it to the pot.
- Simmer the soup for an additional 5 minutes, then remove from heat.
- Serve the Shorbat Adas hot, garnished with fresh cilantro.
