Shorbat Adas (saudi Arabian Lentil Soup)

Ingredients

  • 1 cup red lentils, rinsed
  • 4 cups vegetable broth
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons olive oil
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and sauté until it becomes translucent.
  3. Add the minced garlic, ground cumin, ground coriander, turmeric, and cayenne pepper. Cook for 1-2 minutes until fragrant.
  4. Add the rinsed red lentils and vegetable broth to the pot. Bring to a boil, then reduce the heat and let it simmer for 30-35 minutes, or until the lentils are soft.
  5. Season with salt and black pepper to taste.
  6. Use an immersion blender to blend the soup until smooth, or transfer half of the soup to a blender and blend until smooth, then return it to the pot.
  7. Simmer the soup for an additional 5 minutes, then remove from heat.
  8. Serve the Shorbat Adas hot, garnished with fresh cilantro.
