Shorbat Adas (spiced Lamb And Lentil Soup)
Shorbat Adas is a traditional West Asian spiced lamb and lentil soup that is both hearty and flavorful. This comforting soup is perfect for a cozy night in or as a starter for a special meal.
Ingredients
- 1 lb lamb, cubed
- 1 cup red lentils, rinsed
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp turmeric
- 1/4 tsp cinnamon
- 6 cups chicken or vegetable broth
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the lamb and cook until browned on all sides.
- Add the chopped onion and garlic to the pot and sauté until softened.
- Stir in the ground cumin, coriander, turmeric, and cinnamon, and cook for 1-2 minutes until fragrant.
- Add the rinsed red lentils and chicken or vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 45 minutes, or until the lentils are tender.
- Season with salt and pepper to taste.
- Serve the Shorbat Adas hot, garnished with fresh herbs if desired.
