Shorbat Adas (spiced Lamb And Lentil Soup)

Ingredients

  • 1 lb lamb, cubed
  • 1 cup red lentils, rinsed
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric
  • 1/4 tsp cinnamon
  • 6 cups chicken or vegetable broth
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the lamb and cook until browned on all sides.
  2. Add the chopped onion and garlic to the pot and sauté until softened.
  3. Stir in the ground cumin, coriander, turmeric, and cinnamon, and cook for 1-2 minutes until fragrant.
  4. Add the rinsed red lentils and chicken or vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 45 minutes, or until the lentils are tender.
  5. Season with salt and pepper to taste.
  6. Serve the Shorbat Adas hot, garnished with fresh herbs if desired.
