Ingredients

  • 1 cup red lentils, rinsed
  • 4 cups vegetable broth
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon cayenne pepper
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons chopped fresh cilantro
  • 2 tablespoons chopped fresh parsley

Instructions

  1. In a large pot, sauté the onion and garlic until softened.
  2. Add the cumin, turmeric, and cayenne pepper, and cook for 1-2 minutes until fragrant.
  3. Add the red lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the lentils are tender.
