Shorbat Adas is a traditional Emirati spicy lentil soup that is bursting with flavors of lemon and herbs. This hearty and comforting soup is perfect for warming up on a chilly day or as a light meal any time of the year.
Ingredients
- 1 cup red lentils, rinsed
- 4 cups vegetable broth
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon cayenne pepper
- Salt to taste
- Black pepper to taste
- 2 tablespoons fresh lemon juice
- 2 tablespoons chopped fresh cilantro
- 2 tablespoons chopped fresh parsley
Instructions
- In a large pot, sauté the onion and garlic until softened.
- Add the cumin, turmeric, and cayenne pepper, and cook for 1-2 minutes until fragrant.
- Add the red lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the lentils are tender.
- Season with salt and black pepper to taste. Stir in the lemon juice, cilantro, and parsley.
- Serve hot and garnish with additional herbs if desired.
