Shorbat Adas (spicy Saudi Arabian Lentil Stew)

Ingredients

  • 2 cups red lentils, rinsed
  • 6 cups water
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon cayenne pepper
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons olive oil
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, combine the lentils and water. Bring to a boil, then reduce heat and simmer for 20 minutes.
  2. In a separate pan, heat the olive oil over medium heat. Add the onions and garlic, and sauté until softened.
  3. Add the cumin, coriander, turmeric, and cayenne pepper to the onion mixture. Cook for 2-3 minutes, stirring constantly.
  4. Add the onion and spice mixture to the pot of lentils. Season with salt and black pepper to taste. Simmer for an additional 15-20 minutes.
  5. Once the lentils are soft and the flavors have melded, remove from heat. Serve hot, garnished with fresh cilantro.
