Shorbat Adas (spicy Saudi Arabian Lentil Stew)
Shorbat Adas is a traditional Saudi Arabian lentil stew that is packed with warm spices and hearty flavors. This comforting dish is perfect for a cozy night in or as a starter for a special meal.
Ingredients
- 2 cups red lentils, rinsed
- 6 cups water
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon cayenne pepper
- Salt to taste
- Black pepper to taste
- 2 tablespoons olive oil
- Fresh cilantro for garnish
Instructions
- In a large pot, combine the lentils and water. Bring to a boil, then reduce heat and simmer for 20 minutes.
- In a separate pan, heat the olive oil over medium heat. Add the onions and garlic, and sauté until softened.
- Add the cumin, coriander, turmeric, and cayenne pepper to the onion mixture. Cook for 2-3 minutes, stirring constantly.
- Add the onion and spice mixture to the pot of lentils. Season with salt and black pepper to taste. Simmer for an additional 15-20 minutes.
- Once the lentils are soft and the flavors have melded, remove from heat. Serve hot, garnished with fresh cilantro.
