Shorbat Adas (syrian Lentil Soup)
Shorbat Adas is a traditional Syrian lentil soup that is both nutritious and comforting. This hearty soup is packed with flavors and is perfect for a cozy meal on a cold day.
Ingredients
- 1 cup red lentils
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 carrot, diced
- 1 potato, diced
- 6 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1/2 teaspoon turmeric
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Add the diced carrot and potato, and cook for 5 minutes.
- Rinse the red lentils under cold water, then add them to the pot.
- Pour in the vegetable broth and add the cumin, coriander, turmeric, salt, and pepper.
- Bring the soup to a boil, then reduce the heat and let it simmer for 20-25 minutes, or until the lentils and vegetables are tender.
- Adjust the seasoning if needed, then serve the soup hot, garnished with fresh parsley.
