Ingredients

  • 1 cup red lentils
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 carrot, diced
  • 1 potato, diced
  • 6 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon turmeric
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  3. Add the diced carrot and potato, and cook for 5 minutes.
  4. Rinse the red lentils under cold water, then add them to the pot.
  5. Pour in the vegetable broth and add the cumin, coriander, turmeric, salt, and pepper.
  6. Bring the soup to a boil, then reduce the heat and let it simmer for 20-25 minutes, or until the lentils and vegetables are tender.
  7. Adjust the seasoning if needed, then serve the soup hot, garnished with fresh parsley.
