Ingredients

  • 1.5 lbs lamb, cut into chunks
  • 1 cup dried chickpeas, soaked overnight
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 2 tomatoes, diced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 6 cups chicken or vegetable broth
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. In a large pot, heat some oil over medium heat. Add the lamb and brown on all sides. Remove the lamb and set aside.
  2. Add the chopped onion to the pot and cook until softened. Add the garlic and cook for another minute.
  3. Stir in the diced tomatoes, cumin, coriander, cinnamon, and nutmeg. Cook for a few minutes until the tomatoes start to break down.
  4. Return the lamb to the pot and add the soaked chickpeas and broth. Season with salt and pepper.
