Shorbat Hummus (spicy Saudi Arabian Chickpea Stew)
Shorbat Hummus is a traditional Saudi Arabian chickpea stew that is packed with flavor and spice. This hearty and comforting dish is perfect for a cozy night in or for entertaining guests.
Ingredients
- 2 cups dried chickpeas, soaked overnight
- 1 onion, finely chopped
- 4 cloves garlic, minced
- 2 tomatoes, diced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon cayenne pepper
- 6 cups vegetable broth
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, sauté the onion and garlic until softened.
- Add the tomatoes, cumin, coriander, and cayenne pepper. Cook for 5 minutes.
- Drain the soaked chickpeas and add them to the pot. Stir to combine with the spices and vegetables.
- Pour in the vegetable broth and bring the stew to a boil. Reduce the heat and simmer for 1 hour, or until the chickpeas are tender.
- Season with salt and pepper to taste.
- Serve the Shorbat Hummus hot, garnished with fresh cilantro.
