Shorbat Hummus (spicy Saudi Arabian Chickpea Stew)

Ingredients

  • 2 cups dried chickpeas, soaked overnight
  • 1 onion, finely chopped
  • 4 cloves garlic, minced
  • 2 tomatoes, diced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon cayenne pepper
  • 6 cups vegetable broth
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, sauté the onion and garlic until softened.
  2. Add the tomatoes, cumin, coriander, and cayenne pepper. Cook for 5 minutes.
  3. Drain the soaked chickpeas and add them to the pot. Stir to combine with the spices and vegetables.
  4. Pour in the vegetable broth and bring the stew to a boil. Reduce the heat and simmer for 1 hour, or until the chickpeas are tender.
  5. Season with salt and pepper to taste.
