Shorpa (creamy Corn Soup)
Shorpa is a traditional Circassian creamy corn soup that is perfect for warming up on a cold day. This comforting soup is easy to make and bursting with flavor.
Ingredients
- 4 cups fresh or frozen corn kernels
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- Salt and pepper to taste
Instructions
- In a large pot, sauté the onion and garlic until softened.
- Add the corn and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes.
- Use an immersion blender to puree the soup until smooth.
- Stir in the heavy cream and season with salt and pepper.
