Ingredients

  • 1 cup red lentils, rinsed
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 potatoes, peeled and cubed
  • 4 cups vegetable broth

  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 4 cups water

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onions, carrots, and potatoes. Cook for 5 minutes, stirring occasionally.
  2. Add the rinsed lentils, vegetable broth, water, cumin, paprika, salt, and pepper. Bring to a boil, then reduce heat and simmer for 45 minutes, or until the lentils and vegetables are tender.
