Shorpa (lentil And Vegetable Soup)
Shorpa is a traditional Circassian lentil and vegetable soup that is hearty, flavorful, and perfect for a comforting meal.
Ingredients
- 1 cup red lentils, rinsed
- 1 onion, chopped
- 2 carrots, diced
- 2 potatoes, peeled and cubed
- 4 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- 4 cups water
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onions, carrots, and potatoes. Cook for 5 minutes, stirring occasionally.
- Add the rinsed lentils, vegetable broth, water, cumin, paprika, salt, and pepper. Bring to a boil, then reduce heat and simmer for 45 minutes, or until the lentils and vegetables are tender.
- Adjust seasoning to taste and serve hot.
