Shorwa (spiced Chickpea Soup)
Shorwa is a traditional Afghan spiced chickpea soup that is hearty, flavorful, and perfect for a comforting meal. This recipe is a staple in Afghan cuisine and is often enjoyed with bread or rice.
Ingredients
- 1 cup dried chickpeas, soaked overnight
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon ground turmeric
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cumin
- 1/4 teaspoon cayenne pepper
- Salt to taste
- 6 cups vegetable broth
- 2 tomatoes, diced
- 2 carrots, diced
- 2 potatoes, diced
- Fresh cilantro for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the chopped onion and cook until soft and translucent.
- Stir in the minced garlic, ground turmeric, ground coriander, ground cumin, cayenne pepper, and salt. Cook for 2 minutes.
- Add the soaked chickpeas and vegetable broth. Bring to a boil, then reduce heat and simmer for 30 minutes.
- Add the diced tomatoes, carrots, and potatoes. Simmer for an additional 20-30 minutes, or until the chickpeas and vegetables are tender.
- Adjust the seasoning if needed and serve hot, garnished with fresh cilantro.
