Shredded Beef (cuban Ropa Vieja)

Ingredients

  • 2 lbs flank steak
  • 1 onion, sliced
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 3 cloves garlic, minced
  • 1 can (14 oz) crushed tomatoes
  • 1 cup beef broth
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp oregano
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Season the flank steak with salt and pepper.
  2. Heat olive oil in a large pot over medium-high heat. Sear the steak on both sides until browned, then transfer to a plate.
  3. In the same pot, sauté the onion, bell peppers, and garlic until softened.
  4. Stir in the crushed tomatoes, beef broth, cumin, paprika, and oregano. Return the steak to the pot.
  5. Cover and simmer on low heat for 3-4 hours, until the beef is tender and easily shreds with a fork.
  6. Shred the beef using two forks, then stir it back into the sauce.
  7. Adjust seasoning with salt and pepper if needed.
  8. Serve the shredded beef hot over rice or with a side of black beans.
