Shredded Beef, also known as Cuban Ropa Vieja, is a classic dish in West Indian Cuisine. This flavorful and tender beef dish is perfect for a hearty and satisfying meal.
Ingredients
- 2 lbs flank steak
- 1 onion, sliced
- 1 green bell pepper, sliced
- 1 red bell pepper, sliced
- 3 cloves garlic, minced
- 1 can (14 oz) crushed tomatoes
- 1 cup beef broth
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp oregano
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Season the flank steak with salt and pepper.
- Heat olive oil in a large pot over medium-high heat. Sear the steak on both sides until browned, then transfer to a plate.
- In the same pot, sauté the onion, bell peppers, and garlic until softened.
- Stir in the crushed tomatoes, beef broth, cumin, paprika, and oregano. Return the steak to the pot.
- Cover and simmer on low heat for 3-4 hours, until the beef is tender and easily shreds with a fork.
- Shred the beef using two forks, then stir it back into the sauce.
- Adjust seasoning with salt and pepper if needed.
- Serve the shredded beef hot over rice or with a side of black beans.
