Ingredients
- 2 lbs boneless, skinless chicken breasts
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 1 can (4 oz) diced green chilies
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- Salt and pepper to taste
- 8 small flour or corn tortillas
- Optional toppings: shredded lettuce, diced tomatoes, shredded cheese, sour cream, salsa
Instructions
- In a large pot, combine the chicken, onion, garlic, diced tomatoes, green chilies, chili powder, cumin, paprika, salt, and pepper.
- Cover and cook on low heat for 4 hours, or until the chicken is tender and easily shreds with a fork.
- Remove the chicken from the pot and shred it using two forks.
- Return the shredded chicken to the pot and mix it with the cooking liquid.
- Warm the tortillas in a dry skillet or in the microwave.
- Assemble the tacos by filling each tortilla with the shredded chicken and desired toppings.
