Shredded Chicken Tacos

Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 can (4 oz) diced green chilies
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 8 small flour or corn tortillas
  • Optional toppings: shredded lettuce, diced tomatoes, shredded cheese, sour cream, salsa

Instructions

  1. In a large pot, combine the chicken, onion, garlic, diced tomatoes, green chilies, chili powder, cumin, paprika, salt, and pepper.
  2. Cover and cook on low heat for 4 hours, or until the chicken is tender and easily shreds with a fork.
  3. Remove the chicken from the pot and shred it using two forks.
  4. Return the shredded chicken to the pot and mix it with the cooking liquid.
  5. Warm the tortillas in a dry skillet or in the microwave.
  6. Assemble the tacos by filling each tortilla with the shredded chicken and desired toppings.
