Shrimp Ceviche (ceviche De Camarón)

Ingredients

  • 1 pound of raw shrimp, peeled and deveined
  • 1 cup of fresh lime juice
  • 1 red onion, finely chopped
  • 1 bell pepper, diced
  • 2 tomatoes, diced
  • 1 cucumber, peeled and diced
  • 1/2 cup of chopped cilantro
  • 2 jalapeño peppers, seeded and finely chopped
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the shrimp and lime juice. Make sure the shrimp is fully submerged. Cover and refrigerate for 15-20 minutes, or until the shrimp turns pink and opaque.
  2. Once the shrimp is cooked in the lime juice, drain the excess liquid.
  3. Add the chopped red onion, bell pepper, tomatoes, cucumber, cilantro, and jalapeño to the shrimp. Mix well.
  4. Season with salt and pepper to taste.
  5. Refrigerate for at least 30 minutes before serving to allow the flavors to meld together.
