Shrimp Chowder (chupe De Camarones)

Ingredients
- 1 pound shrimp, peeled and deveined
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 large potatoes, diced
- 2 cups corn kernels
- 4 cups fish or vegetable broth
- 1 cup evaporated milk
- 1 teaspoon paprika
- 1 teaspoon cumin
- Salt and pepper to taste
- 1/4 cup chopped fresh cilantro
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and cook until softened.
- Add the potatoes, corn, and broth to the pot. Bring to a boil, then reduce heat and simmer for 15 minutes, or until the potatoes are tender.
- Stir in the shrimp, evaporated milk, paprika, cumin, salt, and pepper. Cook for an additional 5-7 minutes, or until the shrimp are pink and cooked through.
- Remove from heat and stir in the fresh cilantro. Serve hot and enjoy!
