Ingredients

  • 1 pound fresh shrimp, peeled and deveined
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup water
  • 2 cloves garlic, minced
  • 1/4 cup chopped green onions
  • 1/4 cup chopped cilantro
  • Oil for frying
  • 12 large lettuce leaves

Instructions

  1. In a large bowl, combine the flour, cornstarch, baking powder, salt, and black pepper.
  2. Add water to the dry ingredients and mix until smooth.
  3. Chop the shrimp into small pieces and add them to the batter, along with the minced garlic, green onions, and cilantro. Mix until the shrimp pieces are well coated.
  4. Heat oil in a deep skillet over medium heat. Drop spoonfuls of the shrimp batter into the hot oil and fry until golden brown, about 3-4 minutes per side.
  5. Remove the shrimp fritters from the oil and drain on paper towels.
  6. To serve, place a shrimp fritter in each lettuce cup and garnish with additional cilantro and green onions if desired.
