Ingredients
- 1 pound fresh shrimp, peeled and deveined
- 1 cup all-purpose flour
- 1/2 cup cornstarch
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup water
- 2 cloves garlic, minced
- 1/4 cup chopped green onions
- 1/4 cup chopped cilantro
- Oil for frying
- 12 large lettuce leaves
Instructions
- In a large bowl, combine the flour, cornstarch, baking powder, salt, and black pepper.
- Add water to the dry ingredients and mix until smooth.
- Chop the shrimp into small pieces and add them to the batter, along with the minced garlic, green onions, and cilantro. Mix until the shrimp pieces are well coated.
- Heat oil in a deep skillet over medium heat. Drop spoonfuls of the shrimp batter into the hot oil and fry until golden brown, about 3-4 minutes per side.
- Remove the shrimp fritters from the oil and drain on paper towels.
- To serve, place a shrimp fritter in each lettuce cup and garnish with additional cilantro and green onions if desired.
