Ingredients

- 1/4 cup chopped green onions
- 1/4 cup chopped red bell pepper
- 1/4 cup chopped cilantro
- 1/4 cup chopped onion
- 2 cloves garlic, minced
- Vegetable oil for frying
- 8 small tortillas
- Shredded lettuce, diced tomatoes, and salsa for serving
Instructions
- In a large bowl, combine the flour, cornstarch, baking powder, salt, and black pepper.
- Add water to the dry ingredients and mix until smooth.
- Stir in the chopped green onions, red bell pepper, cilantro, onion, and garlic.
- Gently fold in the shrimp until they are evenly coated with the batter.
- Heat vegetable oil in a deep skillet over medium heat.
- Drop spoonfuls of the shrimp batter into the hot oil and fry until golden brown, about 3-4 minutes per side.
- Remove the fritters from the oil and drain on paper towels.
