Shrimp Paste Fried Rice (sarawakian Nasi Goreng Belacan)

Ingredients

  • 3 cups cooked rice
  • 200g shrimp, peeled and deveined
  • 2 tablespoons shrimp paste (belacan)
  • 3 cloves garlic, minced
  • 2 eggs, beaten
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 3 tablespoons soy sauce
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat vegetable oil in a wok or large skillet over medium heat.
  2. Add minced garlic and shrimp paste, stir-fry for 1-2 minutes until fragrant.
  3. Add shrimp and cook until pink and cooked through.
  4. Push the shrimp to one side of the wok, pour beaten eggs onto the other side. Scramble the eggs until cooked, then mix with the shrimp.
  5. Add mixed vegetables and stir-fry for 2-3 minutes.
  6. Add cooked rice and soy sauce, stir-fry until well combined and heated through.
  7. Season with salt and pepper to taste.
  8. Remove from heat and serve hot.
