Shrimp Paste Fried Rice, also known as Nasi Goreng Belacan, is a popular dish in Sarawakian cuisine. This flavorful and aromatic fried rice is made with shrimp paste, giving it a unique and savory taste.
Ingredients
- 3 cups cooked rice
- 200g shrimp, peeled and deveined
- 2 tablespoons shrimp paste (belacan)
- 3 cloves garlic, minced
- 2 eggs, beaten
- 1 cup mixed vegetables (carrots, peas, bell peppers)
- 3 tablespoons soy sauce
- 1 tablespoon vegetable oil
- Salt and pepper to taste
Instructions
- Heat vegetable oil in a wok or large skillet over medium heat.
- Add minced garlic and shrimp paste, stir-fry for 1-2 minutes until fragrant.
- Add shrimp and cook until pink and cooked through.
- Push the shrimp to one side of the wok, pour beaten eggs onto the other side. Scramble the eggs until cooked, then mix with the shrimp.
- Add mixed vegetables and stir-fry for 2-3 minutes.
- Add cooked rice and soy sauce, stir-fry until well combined and heated through.
- Season with salt and pepper to taste.
- Remove from heat and serve hot.
