Shrimp Rice Noodle Roll

Ingredients
- 8 large shrimp, peeled and deveined
- 4 oz rice noodles, cooked and drained
- 8 rice paper wrappers
- 1 cup shredded lettuce
- 1/4 cup fresh mint leaves
- 1/4 cup fresh cilantro leaves
- 1/4 cup shredded carrots
- 1/4 cup chopped peanuts
- 1/4 cup hoisin sauce
- 1/4 cup sweet chili sauce
Instructions
- Prepare the shrimp by boiling them in water for 2-3 minutes until they turn pink. Remove from water and let them cool.
- Soak the rice paper wrappers in warm water for about 15-20 seconds until they become pliable.
- Place a small amount of cooked rice noodles, lettuce, mint, cilantro, carrots, and chopped peanuts in the center of each rice paper wrapper.
- Place a shrimp on top of the noodle mixture.
- Roll the rice paper wrapper tightly, tucking in the sides as you go.
- Serve the shrimp rice noodle rolls with hoisin sauce and sweet chili sauce for dipping.
