Shrimp Rice Noodle Roll

Ingredients

  • 8 large shrimp, peeled and deveined
  • 4 oz rice noodles, cooked and drained
  • 8 rice paper wrappers
  • 1 cup shredded lettuce
  • 1/4 cup fresh mint leaves
  • 1/4 cup fresh cilantro leaves
  • 1/4 cup shredded carrots
  • 1/4 cup chopped peanuts
  • 1/4 cup hoisin sauce
  • 1/4 cup sweet chili sauce

Instructions

  1. Prepare the shrimp by boiling them in water for 2-3 minutes until they turn pink. Remove from water and let them cool.
  2. Soak the rice paper wrappers in warm water for about 15-20 seconds until they become pliable.
  3. Place a small amount of cooked rice noodles, lettuce, mint, cilantro, carrots, and chopped peanuts in the center of each rice paper wrapper.
  4. Place a shrimp on top of the noodle mixture.
  5. Roll the rice paper wrapper tightly, tucking in the sides as you go.
  6. Serve the shrimp rice noodle rolls with hoisin sauce and sweet chili sauce for dipping.
