Shrimp Salad

Ingredients
- 1 pound shrimp, peeled and deveined
- 1/2 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- In a large pot of boiling water, cook the shrimp for 2-3 minutes until they turn pink and opaque. Drain and let cool.
- In a large bowl, combine the cooked shrimp, cherry tomatoes, cucumber, red onion, and parsley.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour the dressing over the shrimp and vegetables, and toss to coat evenly.
- Chill the shrimp salad in the refrigerator for at least 30 minutes before serving.
