Shrimp Salad

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice

Instructions

  1. In a large pot of boiling water, cook the shrimp for 2-3 minutes until they turn pink and opaque. Drain and let cool.
  2. In a large bowl, combine the cooked shrimp, cherry tomatoes, cucumber, red onion, and parsley.
  3. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour the dressing over the shrimp and vegetables, and toss to coat evenly.
  4. Chill the shrimp salad in the refrigerator for at least 30 minutes before serving.
