Shrimp Soup, or Sopa de Camarones, is a popular dish in Peruvian Chinese Cuisine, blending the flavors of both cultures into a delicious and comforting soup.
Ingredients
- 1 pound shrimp, peeled and deveined
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 2 tomatoes, chopped
- 1 teaspoon cumin
- 1 teaspoon paprika
- 6 cups fish or shrimp stock
- 1 cup frozen peas
- 1/4 cup chopped cilantro
- Salt and pepper to taste
Instructions
- In a large pot, sauté the onion and garlic until softened.
- Add the bell pepper, tomatoes, cumin, and paprika. Cook for 5 minutes.
- Pour in the stock and bring to a simmer.
- Add the shrimp and peas, and cook for 5-7 minutes until the shrimp is pink and cooked through.
