Shrimp Stuffed Potato Casserole (causa Rellena De Camarones)

Ingredients

  • 2 lbs Yukon Gold potatoes, peeled and cubed
  • 1/4 cup fresh lime juice
  • 1/4 cup vegetable oil
  • 1 teaspoon aji amarillo paste (Peruvian yellow chili pepper paste)
  • 1 lb cooked shrimp, peeled and deveined
  • 1/2 cup mayonnaise
  • 1 avocado, sliced
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste

Instructions

  1. Boil the potatoes in salted water until tender. Drain and mash with lime juice, vegetable oil, aji amarillo paste, salt, and pepper. Let the mashed potatoes cool.
  2. In a bowl, mix the cooked shrimp with mayonnaise and chopped cilantro. Season with salt and pepper.
  3. Spread half of the mashed potatoes in the bottom of a casserole dish. Layer the sliced avocado on top of the potatoes, then add the shrimp mixture. Finish with the remaining mashed potatoes on top.
  4. Refrigerate the casserole for at least 1 hour before serving.
