Shrimp Stuffed Potato Casserole (causa Rellena De Camarones)
This Shrimp Stuffed Potato Casserole, also known as Causa Rellena de Camarones, is a delicious and unique dish from Peruvian Chinese cuisine. It combines the flavors of tender shrimp, creamy mashed potatoes, and zesty Peruvian yellow chili pepper sauce.
Ingredients
- 2 lbs Yukon Gold potatoes, peeled and cubed
- 1/4 cup fresh lime juice
- 1/4 cup vegetable oil
- 1 teaspoon aji amarillo paste (Peruvian yellow chili pepper paste)
- 1 lb cooked shrimp, peeled and deveined
- 1/2 cup mayonnaise
- 1 avocado, sliced
- 1/4 cup chopped fresh cilantro
- Salt and pepper to taste
Instructions
- Boil the potatoes in salted water until tender. Drain and mash with lime juice, vegetable oil, aji amarillo paste, salt, and pepper. Let the mashed potatoes cool.
- In a bowl, mix the cooked shrimp with mayonnaise and chopped cilantro. Season with salt and pepper.
- Spread half of the mashed potatoes in the bottom of a casserole dish. Layer the sliced avocado on top of the potatoes, then add the shrimp mixture. Finish with the remaining mashed potatoes on top.
- Refrigerate the casserole for at least 1 hour before serving.
