Shrimp Stuffed Yuca Fritters (camarones Alcapurria)
These Shrimp Stuffed Yuca Fritters, also known as Camarones Alcapurria, are a delightful fusion of Puerto Rican and Chinese cuisines. The crispy exterior of the fritters gives way to a savory shrimp and yuca filling, creating a perfect blend of flavors and textures.
Ingredients
- 1 lb yuca, peeled and grated
- 1 lb shrimp, peeled and deveined
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1/4 cup cilantro, chopped
- 1 tsp cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup vegetable oil for frying
Instructions
- In a large bowl, mix together the grated yuca, chopped onion, minced garlic, cilantro, cumin, salt, and black pepper.
- Take a small portion of the yuca mixture and flatten it in the palm of your hand. Place a shrimp in the center and fold the yuca mixture around it, forming a ball. Repeat with the remaining yuca and shrimp.
- In a large skillet, heat the vegetable oil over medium heat. Carefully place the yuca and shrimp balls in the hot oil and fry until golden brown and crispy, about 4-5 minutes per side.
- Remove the fritters from the oil and place them on a paper towel-lined plate to drain any excess oil.
- Serve the shrimp stuffed yuca fritters hot, with your favorite dipping sauce or salsa.
