Shrimp Tamarind Soup (sinigang Na Hipon)

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 8 cups water
  • 1 medium tomato, quartered
  • 1 medium onion, quartered
  • 2 cups tamarind (sampaloc) juice
  • 2 cups spinach leaves
  • 2 pieces long green chili peppers
  • 1 medium radish, sliced
  • Salt and fish sauce to taste

Instructions

  1. In a large pot, bring the water to a boil.
  2. Add the tomatoes and onions, and simmer for 5 minutes.
  3. Pour in the tamarind juice and bring to a boil again.
  4. Add the shrimp and radish, and cook for 3-5 minutes or until the shrimp turns pink.
  5. Season with salt and fish sauce to taste.
  6. Add the spinach and long green chili peppers, and cook for another 2 minutes.
  7. Remove from heat and serve hot with steamed rice.
