Shrimp Tamarind Soup (sinigang Na Hipon)

Ingredients
- 1 pound shrimp, peeled and deveined
- 8 cups water
- 1 medium tomato, quartered
- 1 medium onion, quartered
- 2 cups tamarind (sampaloc) juice
- 2 cups spinach leaves
- 2 pieces long green chili peppers
- 1 medium radish, sliced
- Salt and fish sauce to taste
Instructions
- In a large pot, bring the water to a boil.
- Add the tomatoes and onions, and simmer for 5 minutes.
- Pour in the tamarind juice and bring to a boil again.
- Add the shrimp and radish, and cook for 3-5 minutes or until the shrimp turns pink.
- Season with salt and fish sauce to taste.
- Add the spinach and long green chili peppers, and cook for another 2 minutes.
- Remove from heat and serve hot with steamed rice.
